At the edge of the Pan American highway, in shops and lounges CHEESES, MILK CARAMEL PUDDING, ARROPE DE MORA (kind of blackberry sweet), NOGADAS (kind of biscuit), GUAYABA, and THE CLASSIC BISCUITS are very requested by travelers. Pot Tortillas, chicha de Jora (kind of drink), beans and llapingachos (smash potatoes) here simply called tortillas of potato.
The Richu Jacu is a kind of soup made with all the grains and the Cariucho is a mixture of cooked potatoes with sliced cheese, eggs and roasted guinea pig, Both dishes are widely prepared in the celebrations or special occasions within communities.
