Traditional Food
At the edge of the Pan American highway, in shops and lounges CHEESES, MILK CARAMEL PUDDING, ARROPE DE MORA (kind of blackberry sweet), NOGADAS (kind of biscuit), GUAYABA, and THE CLASSIC BISCUITS are very requested by travelers.
Pot Tortillas, chicha de Jora (kind of drink), beans and llapingachos (smash potatoes) here simply called tortillas of potato.

The Richu Jacu is a kind of soup made with all the grains and the Cariucho is a mixture of cooked potatoes with sliced cheese, eggs and roasted guinea pig, Both dishes are widely prepared in the celebrations or special occasions within communities.

They are made with vegetable fat and yeast, plus eggs, sugar, salt, margarine and a natural colorant based on the same egg yolk. The ingredients are mixed and the dough is formed, this last one is stretched and salt is added , then it is wrapped and cut into the shape of the biscuits. There are still places where they are packed in leaves of atchira (local plant).
The biscuits are requested a lot and reflected as one of the items that generate greater income for the town of Cayambe.
